Panama Hacienda la Esmeralda Special

This incredible, award winning coffee is back!

Overlooking a lush valley, the coffee from Colgá is part of the Hacienda La Esmeralda new production area in Cañas Verdes at an altitude of 1,400 meters.

This coffee is a Geisha varietal which gives it its’ characteristic long thin bean shape and delicate floral flavour profile. The yield from a Geisha tree is lower than other varietals, but it thrives where other trees can not; at high elevation exposed to harsh winds. This coffee is truly one of the marvels of nature, discovered serendipitously by the Peterson family (owners of the Esmeralda farm in Panama) when they allowed a low yielding coffee tree to grow and thrive where other coffee trees struggled to survive.

Intensely fragrant and aromatic, with cocoa and nutmeg, it has bright, sweet acidity that is slightly tomatoey. The sweet tangy acidity is perfectly balanced with silky notes of fruitines, floral and a hint of jasmine. The cup has a delightfully smooth and satisfying finish.

This incredible coffee is coming back to Smiling Goat! Our great friends at Java Blend Coffee Roasters have started roasting their very limited supply and we’ve been ‘dialing in’* the coffee on the Clover. Unfortunately, we’ve not quite got it ‘perfect’ yet.

As soon as we’re there, we’ll have it on the menu and ready to enjoy!!! … we’ll make an announcement here on this Blog when it available by the cup.

*Dialing in – adjusting the brewing variables of dose, grind and dwell time in very, very fine and small increments and brewing cup after cup until we fine the ‘sweet spot’ for that particular coffee. Each coffee has it’s own particular set of variables that make it delicious.
